Lemoncello!
8 lemons
1 litre vodka
250 g white sugar
Carefully peel or grate all the yellow peel from the lemons. Take care to avoid getting any white pith
Put peel in glass bowl with the vodka. Cover with clingfilm & leave for 30 days in a cool dark place
Add sugar and stir daily untill the sugar has dissolved. (Keep covered between stirrings)
Strain, discard the lemon peel. Bottle seal & label
Store in the freezer and serve well-chilled
(havent actually tried this recipe, but it sounds good!)
You can also freeze the juice in ice-cube trays for use in cooking if not needed immediately

I would personaly cut the sugar a bit and and the juice from a few of them to ballance it out a bit, then filter thorugh coffee filter paper, thats just be though.

Lemoncello sounds like my next project ! I've even got the lemons.
After the success of my cointreau substitute, lemons are the next logical step. I note that commercial lemoncello is already louched and diluted

how did you do that? i LOVE cointreau but am permaskint so i never get to have it. a tia maria substitute would also do

Citrus Liqueurs ingredients per bottle
Finely chopped zest of 6 large lemons or 5 medium oranges or 10 small limes
500ml vodka
Make a sugar syrup from
175gm white sugar (I used half this amount last time and it was ok but would maybe use a little more next time)
75ml water
When the sugar has cooled mix all the above and store for 28 days. Shake daily
Taste and add more sugar if needed.
Strain and bottle then allow to condition for a further week or so.
I've got a coffee recipe somewhere too, I'll dig it out for you

Coffee liqueur (Kahlua/Tia Maria)
83ml instant coffee granules
175ml water
270ml sugar
1 vanilla pod or 6 drops vanilla essence
Boil the water and add to the above ingredients. Mix well and allow to cool before adding to 500ml of vodka.
Ready to drink straight away but may improve if conditioned for a few weeks.
