Creamy parsnip soup with peppery cornbread croutons and fresh chives.
I'm getting rather fond of the humble parsnip lately. :flower:

Tonight we are on lasagna, half meat mince and half red lentils. Also made a big pot of vegetable soup for tomorrow!

We had roasted butternut squash,prepared with a recipe by Yamie O.

Cleaning out the veggiebag...

OH went to the allotment to dig and salvaged some spinach & Psb which we are having in pancakes with cheese. :thumbright:

Actually it was duck egg spanish omelette served with leeks first night then cold with salad (no leeks but realised have loads of beetroot to use up) next night, whilst lunch has been a sandwich with hen eggy mix inside the last couple of days.

I'm making up for not eating eggs for 3 whole weeks (and didn't miss them one bit!). :mrgreen:

Not sure about leeky soldiers you know. :dontknow: :lol:

I also need to start using up all these frozen and bottled tomatoes cos in about 4 months time I should be harvesting more - help! :shock:

We had veggie chilli with quorn and loads of veggies.

Also did a pot of carrot and coriander soup at lunch time which was lovely. Not bad for the first time I've ever made it!

Tonight for us is a mad mixture. One portion of broth and one of venison casserole both from the freezer and happily bubbling away together in the slow cooker!

I had Curry Couscous salad, Rhubarb Yoghurt and a Granola Bar stylee thing.

Not exciting but we were parked up at Long Rock watching the waves (that we could see in the dark and rain :lol: ) chilling out so it's all good!
