I was just wondering what to cook over the weekend and remembered and old favourite. It is delicious so I though I would share it with you guys.
4 tablespoons tomato puree
4 tablespoons white wine vinegar
4 tablespoons brown sugar
4 tablespoons soy sauce
4 teaspoons tabasco sauce (use 2 for a milder sauce)
This makes quite a thick sauce so you will need to add some water until you get to the right consistency. Just mix it all together in the pot with some water and add chicken.
I usually cook large chunks of chicken in this sauce for about 15/20 minutes and then serve with some stir fry veg and rice or noodles.
Don't expect the gloopy type sauce you get from Chinese restaurants, it's much better than that.

I tried this last night with some left over pork and some noodles that had been loitering in my pantry for goodness knows how long (but were perfectly fine) and it was absolutely scrumptious! Thank you

It's very similar to the mix I use for spareribs. The only difference is that I use honey instead of brown sugar. And it is yummy indeed.
