there are various recipes online but i was wondering if you good people had any recommendations. actually i thought i had seen a recipe on here but a search came up with nowt. anyone?

The original was an anerobic fermentation of crushed peppers, similar to a saurkraut. Half-a-cup of salt to a gallon of crushed red peppers. Allow to ferment for a month, and mix the strained liquor with white wine vinegar. Details taken from Salt by Mark Kurlansky.

i make most years and just boil chilles in rice wine vinegar and salt
not correct but very quick and simple and taste great
