I have just recieved an Elder tree from Tasmania. I would like recipes for making cordial and any uses for the flowers please.

Is it the golden or the dark (nigra) elder?

I have a recipe for elderflower champagne that I will hunt out for you.

I have the golden elder and made a batch one year. We thought it was foul, but then again we don't like wine much or beer at all. My father quite cheerfully consumed the lot so it can;t have been too bad :lol:

sounds like it might be the Nigra mine is the lighter one (Canadiensis?).

I don't know about the cordial, I will have a look through my books and let you know :wink:

I have had somewhat of alook through and can find a number of elderflower wine recipes, but no cordial. I have found a recipe for elderberry syrup, is that of any use?
