Something different to do with beets.
6 x medium beetroot cooked
1 x red onion chopped finely
1 x Tablespoon of chopped fresh mint OR you can cheat and it tastes ok with a little mint sauce.
2 x tablespoons of red wine vinegar.
Slice or chop the beetroot into small chunks, at the red onion, mint and vinegar. Allow to 'settle in' for an hour, in the fridge (cover it, cos the onion will pong the fridge out!)
Nice and easy, serve it with any salad.
