Mugwort (or wormwood)

You all seem to be such proficient chefs. Well here is a place to share some of that cooking knowledge. Or do you have a cooking problem? Ask away. Jams and chutneys go here too.

Mugwort (or wormwood)

Post: # 285643Post Brewtrog »

I've got a rather happy wormwood plant in my back garden with little use for it (well an ale is planned). As everything in the garden is there for a us, and I want to save the plant, does anyone have any recipes for wormwood (or mugwort for that matter, assuming they work interchangeabley)?

I've got an infusion version planned already, also vermouth if I brew a naff wine, I was more hoping for food uses. I've read that mugwort used to be used with fatty fowl and pork, but not any guide on how much to use, especially with how strong a flavour it is.

I did a quick Google as I'm sure you did and nothing came up other than soup and Japanese rice cakes and the reference to fatty meats in one. I would imagine in the latter it's used in very small quantities, as you would most herbs.

Be careful though, it has abortifacient properties, best avoided by anyone pregnant.
