Nettle Recipes.

I have just starting eating Nettles, so far I have only stir fried them but I plan to make soup tomorrow. Are there any other recipes that I should try please?

My favourite nettle recipe is "Cheese and Nettle Toast"! rince the nettles (with some vinegar to get rid of insects and slugs) fry them up in butter or oil, chop them up. Add to that some mustard (Dijon is best but English is fine too) cheese and a good dollop of cream, salt and pepper. You can adjust the measurements to your taste, I use loads of mustard, and add whatever cheese you like best, I use Emmenthal or Gruyère but Cheddar will do fine. If you feel like putting some more effort into it, you can always add some fried onions to the mix. Spread mixture on bread and put under the grill. DELICIOUS and ultra fast!

Creamed nettles, made the same as you would creamed spinach. Near the end of cooking add a generous handful of garlic and serve on top of pasta with a grating of nutmeg.

I do a soup with onion, potato, carrot, wild garlic and veggie stock. Cook up and blend. V yummy.
