So many strawberries!

You all seem to be such proficient chefs. Well here is a place to share some of that cooking knowledge. Or do you have a cooking problem? Ask away. Jams and chutneys go here too.

So many strawberries!

My local supermarket has been running a good offer (BOGOF) on strawberries this week and when they reduced them from £4 a pack to £1:99 they were actually paying me to take them away :iconbiggrin:

In total I got 4.2 kg of them so I've had a go at making my own jam. I followed a recipe from a Good Housekeeping book and used 3.5kg, keeping a few back to munch through with a bit of cream and all went well but the jam didn't set as much as I expected.

I know strawberries are very low in pectin anyway but I was wondering if these 'out of season' berries have even less pectin content.

Anyway, after a short re-boil, a little extra lemon juice and checking the temperature with a digital thermometer, I am happy to say all is well and the jam has now set, albeit a little on the 'soft' side but perfectly acceptable for a strawberry jam first-timer :iconbiggrin:

Oddly enough I don't really like fresh strawberries but will happily eat them as jam. It's the texture rather than anything else with the fresh ones that I find offputting.
I do grow them but there never seem to be enough to make into jam, I don't know why can't be anything to do with my daughter sitting in the patch so often.

I do like them fresh if it's the ones we have grown (in pots in our courtyard - we don't have a garden :( ) especially for breakfast, but the supermarket ones are a bit lacking in flavour...but they're good enough for jam!

Oh no, i love eating fresh ones. We've got quite a big strawberry patch plus some lovely wild ones growing under the fruit trees in the orchard. But i usually eat them all fresh with the kids and don't have enough for jam :oops:

I've just come back from the supermarket...more strawberries reduced on the BOGOF offer...so you know what I'll be doing this afternoon :iconbiggrin:
