You all seem to be such proficient chefs. Well here is a place to share some of that cooking knowledge. Or do you have a cooking problem? Ask away. Jams and chutneys go here too.

Apricot glut!

Post: # 271854Post Spanderholic »

Hello everybody! I recently acquired nearly 6kg of apricots, and I have no clue what to make with them. I have done chutney, muffins and a pie so far. I can't make any more jams or anything as I have run out of jars to put them into. I'm open to any ideas :)

Clean them, de-stone them, bag them up in portions and stick them in the freezer. The you can use them later on for cakes, smoothies or whatever you like. :)

No I won't use a smiley because I've decided to turn into Boboff, as he's turned all nice all of a sudden. Grumble grumble.

How do you do that?

You can take the stones out and dry them whole too, either in a very low oven or in a solar drier. I want to make one of these : http://www.offthegridnews.com/2012/04/1 ... ehydrator/

Wine. If you can jam it, you can ferment it.

Or a liqueur. I'm sure I can find a recipe, something with either brandy or gin.

(I'm guessing these are cheap, fresh, imported from Australia or southern hemisphere apricots - which are in season now)

I'm guessing from her signature that she actually lives in Christchurch/Dunedin, New Zealand.

Disclaimer: I almost certainly haven't a clue what I'm talking about.
