Recipe for Irish Scones

You all seem to be such proficient chefs. Well here is a place to share some of that cooking knowledge. Or do you have a cooking problem? Ask away. Jams and chutneys go here too.

Recipe for Irish Scones

These are really lovely scones, bit of a cross really between scones and rock cakes, but you find them all round Ireland, they are very quick to make, you can make a batch and have them cooked in about 20 minutes when you get used to making them, very handy if you suddenly find you have visitors coming and have no cake or biscuit in the house.

2 heaped mugs of S/R flour
1 teaspoon of baking powder
2 handfuls of sugar
3 handfuls of sultana's
1 egg beaten in a measuring jug, make up to 1/2 pint with milk or buttermilk

put on the oven to 200 c. Put all the dry ingredients into a bowl and mix up, make a well in the middle and add nearly all the liquid, reserving a little for the top of the scones. pull the mixture together using a spoon or fork, turn onto a floured board and just flatten slightly into a fat circle, you can use your mug to cut into six rounds. Pour the last of the milk mixture into your mixing bowl and dip the top of each scone into the liquid, put onto a baking tray and bake for around 10-15 minutes until the tops are golden. Split when cooled and butter.

For variation you can used cherries or cranberries, I have even made them with leftover sweet mincemeat.

Yum! I love scones, (biscuits over here) hot from the oven with a little jam and a soft poached egg. Or no egg at all. Either way---mmmmm!

Try them with some orange zest and dried cranberries sometime.

I had a friend who lived in America and got a taste for toast, butter, jam and bacon all on the same bit of toast, bit weird to us, but I suppose it is what you get used to, I would have a poached egg on a home made English muffin or a nice bit of thick white toast.

just regular mugs you would use for tea or coffee, most mugs hold approx the same volumn
