Broad Bean glut

Post: # 263584Post patR »

As we have sold the house , we now have over 32kls of broad beans to eat before we move... any good recipes would be most appreciated.
Today Im having.
Broad Bean & shrimp spaggetti.

Fry off onions, garlic and a chopped fresh tomato, in some olive oil of course, add half a tub of fake philly (cheapy cream cheese) let it melt nicely, add a few chopped mushrooms, some defrosted frozen shrimp, and tons of broad beans... simmer nicely...
boil up some spagetti, drain and add to sauce... mix well.... yummy

They can be roasted and salted and eaten like crisps. I haven't tried doing this (having harvested less than a pound of beans so far, and no prospect of more as the flowers succumbed to wind and rain :( ) but I've bought them in bags (just like crisps) which have a long shelf life, so I imagine they'd store pretty well like this.

Broad bean falafels are nice. Here's a recipe link (not tested)
