Terribly healthy banana loaf

You all seem to be such proficient chefs. Well here is a place to share some of that cooking knowledge. Or do you have a cooking problem? Ask away. Jams and chutneys go here too.

Terribly healthy banana loaf

At the special request of Shirley's OH (Timberframer), here's the recipe for the banana loaf I made for the picnic at Scotsheep!


50g sunflower oil
2 eggs
3-4 ripe bananas, mashed (3 large or 4 medium)
2 tablespoons lemon juice
grated lemon rind (optional)

mix, add:

250g wholemeal flour, mixed with 1 tablespoon baking powder

If the mixture is too stiff, add a little milk.

Now add one or several of the following:

50g each of
- sunflower seeds
- raisins or sultanas
- other chopped dried fruit
- chopped nuts
- coconut

(The one last Wednesday had sunflower seeds, coconut and raisins in it, and no lemon rind.)

Bake in greased loaf tin at medium heat for about one hour.

And... IT WAS DELICIOUS.... AND it is ALL GONE :mrgreen:

Will bring the clean tin back to you tomorrow Ina.... not sure whether you received my email as I'm having trouble with it... but we are aiming to be there before 9...

Keep the tin if you can make use of it... I have a few of them, and thought of turning them into anti-slug collars!
