Re: mead

thank you all. my mead seems to have woken up lately. i shook it a few times to see if getting rid of the co2 sorted things out, but somehow this seems to have got the yeast going again and it's been bubbling away quite vigorously since. can you get lazy yeast :P

crawly things in my rum

hello, i've had some gorse flowers stewing in rum for a couple of weeks. smells wonderful. there were a lot of black crawling things in the bag of flowers after i picked them, very thin things about 4mm long maybe, and a few made it into the rum. since it's going to be strained i dont mind, but i wa...

Re: wood sorrel

well i ate it and i'm still here. very nice it was too, gave a good tang to the salad. i google-imaged it and there were plenty of examples of white-flowered wood sorrel as well as the yellow kind (i'm near glasgow).

thanks for replying :)

wood sorrel

hey, picked a bunch of what i am quite sure is wood sorrel today, for salad. as i am a newbie i am wondering if there is anything bad that it can be confused with - i tasted some, it has that lemony-appley taste, three heart-shaped leaves, little white flowers. pretty sure but i dont want to eat a w...

Re: mead

thanks for the reply! i cant remember the recipe, all i remember is putting lots of honey and water and yeast in a bucket and that's it! how do i know if the fizz is co2? give it lots of shakes and see if the fizz comes out? if its not that should i just wait and see when it wants to stop fermenting...

mead

hello, i'm making some mead, it's been sat in a demijohn since sometime in july (i think, i'm not very organised with labels) and although there is no airlock activity it is still a bit fizzy tasting and very sweet, though definitely boozy. is this normal? what should i do with it next? any suggesti...

gorse liqueur

anyone done this? i tried to make gorse wine last year but it failed somewhat, so thought i'd try a liqueur infusion type thing with it next time the gorse is out. im determined to capture that sweet coconutty-ness in booze form. i thought maybe using a white rum would be a good idea, since it might...

Re: my first wine is behaving strangely

well i had a taste as i was curious. tastes very dry but no hint of meaty marmiteyness, definitely wine-y though! gonna get the campden tablets and hopefully it will end up drinkable. i shall be patient with the mead, then. next i think i will try blackberry, since it's that time of year... thanks v...

Re: my first wine is behaving strangely

thankyou for the replies, particularly MKG for the very thorough reply. i blame google for telling me to use pineapple juice, next time i will come here and ask you guys. i think i will get some campden tablets because i'm bored of waiting for it to do it's thing. i would like to know though, if i c...

my first wine is behaving strangely

hello, i've had some wine on the go since about may, won't clear and still bubbling away in the airlock. it cleared quite a lot originally after about a month in a demijohn so i racked it into a second demijohn, thinking that's what you're meant to do, and i put a bit of pineapple juice in to top it...

Re: Gorse flower wine - some advice please.

i have a gorse wine question! mine had cleared quite a lot after a month so i racked it into a second demijohn and topped it up with a little pineapple juice, whereupon it clouded up and started bubbling again. i thought okay, the yeast must be using the sugar from the juice so that makes sense, but...
