As far as I know you can preserve them in jars. First griddle them till they turn a lighter colour and the skin is black and easily peels off. The flesh will become floppy. Put in a newly boiled jar of good tasting olive oil so that they are covered. Screw the lid on tight. They taste good at picnic...

Marrow/courgette preservin

Does anyone know of some good ways to preserve marrows and or courgettes? I've had a lovely marrow chutney, but it was only about 5% marrow! I need a good way to either pickle, jam-ify, brew, or chutney-ify lots of them. Thank you.
