Having a glance at Andy Hamilton's recipe, he suggests 3oz dry mugwort for 40 pints - with no other herbs.
Sounds an interesting drink, I'll have to try getting some mugwort.

Easiest way would be to open them into a fermenting bin, let them ferment and rebottle after.

We've all done it, I made a 9% beer once because I forgot that malt extract was basically sugar, so 2 tins of extract plus the usual amount of sugar for 1 tin. To be fair it was a happy accident in that case (very nice beer, a definite sipping beer though). Just blend it with something dry.

No need to worry about saving fennel seeds, brewtrog, unless you want them for cooking. Definitely going to keep fennel seeds, considering that is what we grew our fennel for, don't know if the parents are planning on keeping tomato seeds (I don't like toms and they're not good for brewing, so I leave them alone)

Lactose isn't fermentable. Milk stout is a type of stout that has lactose added to make it sweet. It's quite a nice style.

You could always add nonfermentable sweeteners (or sugars e.g. lactose) to add sweetness. Personally I prefer dry wines. Most wines improve with age and a dry wine will certainly get smoother.
