I feed mine 1/2 rye and 1/2 white bread flour. The rye makes all the difference- its like steroids for sourdough!

The Honey Wine from 'Wild Fermentation' has just two ingredients, fun and easy to make. Can be drunk young or aged- good confidence booster.

I'm happy to start small, we've got a kit on the go now (training wheels!) but I'd hate to think that I'm tied forever to commercial yeasts! If I'm starting to read up where should I be looking? And when I'm a bit more experienced where do I get yeasts from?

I agree it is learnt behaviour and getting worse by the month. The old addage that Englishness is defined by some inability to complain is now firmly utter balls! I think there is a distinction between a complaint and a moan. Complaining sounds negative but it can be constructive and aimed at reach...

Ive thought about this because so far most of my ish endevours hurt my custom with local shops rather than the stuff I get from the big supermarkets- Bread (previously from baker) Veg and fruit (from local green grocer - not that I'm producing much yet!)
