Re: mushroom hunting

As you are talking mushrooms, I'm heading to Devon in 2 weeks and was going to buy a book on British mushrooms. Can anybody recommend one? Also one on foraging? Maybe 1 book has it all or should I buy separate books that are more in depth? I found a Collins Book of British Mushrooms that looked pret...

Re: Prague Powder #2 for curing BUYING??

Oh... I feel some past tensions arising?? ;) Id also like to make chorizo based on a recipe in the guardian paper that didn't mention anything about using Prague powder? Re: Just given 3 demijohns, now what ?

This is a great thread, I'm going to have a bash this weekend. Just a little not about the water I learnt from a wine maker. I live in London where the tap water tends to be a little chlorinated. I was advised to leave the water out for 24 hours in an open top container to allow the chlorine to evap...

Re: Easy cheese making

Glad to be of help!

The John Seymore technique basically allows the natural bacteria in the raw to break down the milk. Starter culture allows 'good' bacteria to take over the milk so its a safer method. Give me a shout if you have any more cheese questions and GOOD LUCK! ;)

Re: Easy cheese making

Hey I got into cheese making last year, I started off making yoghurt cheese as mentioned above! Just buy some cheese cloth and pour in your natural yoghurt, tire the top around a wooden spoon and let the whey drain out. After a day or two you will have the solid curd and you can then shape and role ...

Hello from london..

Hey all, I'm over the moon to discover this site.. I'm originally from Wales but currently live in London and work in smelly Soho as an animator. To drag myself away from the computer I got involved with cheese making and growing the odd vegetable. Over the past year my enthusiasm for self sufficien...
