The simplest option for brewing from grain is known as "brew in a bag" - you'll find plenty of information if you search for it. It's not a technique I know much about myself though... I do it the complicated way.

I believe the first and most important thing it does is kill them... When you harvest veg, all the cellular processes are still running - for example, especially in the case of peas, they'll still be metabolising their stored sugars, but because they're no longer attached to the plant, they won't be...

I worked in a processing plant one summer, and as I recall, they do blanch them.

27 should not be high enough to stop fermentation...
First question - what makes you think fermentation has almost stopped? The rate of bubbling in an airlock is not a reliable guide to the rate of fermentation - these things often leak a little.

Vinegar won't kill the roots, just the foliage... I'd wager they'll be back. The only form of glyphosate I currently use is the gel... I reckon that's probably OK as you're applying it directly to the target plant, with no risk of over-spray. And even then I'm pretty sparing about it - I only use it on deep-rooted weeds in positions that make them difficult to dig out. Altho...

Depends on whether you're looking to make cherry wine, or cherry beer... I do quite like a Kriek in the right circumstances, but it's not an easy beer to reproduce properly.
