Cheers Mike, I've got one bottle that I opened so will drop a little yeast in it and see if it eats the sugar would be great! The taste is loverly apart from the sweetness.

Yep it's andys receipe and a dam fine one to, just left it way to late to bottle, so I think all the yeast have gone , I was toying with the idea of adding a little yeast to each bottle the put back at room temp?

Sparkle free champagne problem!

I've opened one of my elderflower champagne bottles( receipe from this site ) and no sparkle it's really clear and very tasty , but also sweet so I'm thinking when I primed it with sugar it did not ferment! So what can I do with my Xmas bubbly? I think all the yeast must be gone, any suggestion woul...

I never took the original gravity , good thinking. To late now tasted loverly and now the bubbles have stopped so added sugar and will bottle tomorrow. Thanks . Forgot about my hydrometer!

Still bubbling

Is it normal for elderflower to still be bubbling? I put it in a DJ end of July! I'm making sparkling champagne so need totransfer and add sugar but don't want to while still bubbling.

Cheers mike very helpful, I will try this at the end of fermentation , and will try to avoid the cheap stuff that send you blind!

Do I use a grape spirit, if at what stage, love the easiness of port and slowly gettin other stuff to add, any usefull extras would be good.

On my second batch of elderberry , first turned out well. Still have 2 bottles left for Xmas. This year I'm making a elder and blackberry also elder and damson. But I was wondering why is this a port not a wine? I thought port was fortified , the receipe on this site has no added alcohol!

Very interesting , so it a total professional approach! I think I will keep it traditional and have a cloudy bottle of bubbles thanks ever so much.

I have a cloudy dj bubbling away at the moment but wanted to know the importance of turning the bottle upside down over the course of a month or two? This seems strange as my bottles will end upside down!

Ha ha ha my girlfriend would disagree with you on that! :lol: thanks for the advice it was a hectic Xmas then a holiday , then just forgot. I'm going to try in the next couple of wks then if all is good bottle some and drink some. My plan is to keep some to mature while I make some more this seasons!

Caulked my dj up and it's been 7 months now, can I syphon it off now to bottles or have I left it way to late? Don't fancy drinking a dj of port in one night!

I was hoping for a Xmas tipple , think it will be next year now. I have read it is better to keep it bottled for a while to mature and taste better. So I need to wait.
